Kinilaw is a raw seafood dish native to the Philippines, similar to ceviche. It is more accurately a cooking process that relies on vinegar to denature the ingredients, rather than a dish, as it can also be used to prepare meat and vegetables [via Wikipedia]

Fresh River Shrimp – green mango, calamansi, patis, wansoy

Kalibo Oyster – cane vinegar, ginger, shallots, calamansi, red bell pepper

Tuna – Gensan tuna, wansoy, green bell pepper, red bell pepper, ripe mango, togarashi

Tanigue – cane vinegar, ginger, shallots, red bell pepper, spring onion

Lapu-Lapu – cane vinegar, mandarin orange, wansoy
